The dish is originated in the Peshawar but also owes a large part of its flavour heritage to the Delhi, which is also known as the culinary capital of India. It was during the pre-partition, a man named Kundan Lal Gujral owned and operated a restaurant named Moti Mahal in Daryaganj, Delhi. The outlet was famous for its Tandoori chicken, also known as roasted chicken. Due to sheer wastage of unsold dried chicken pieces, Kundan Lal, an astute businessman decided to play around pieces with thick gravy made with butter and cream, tomatoes and spices, butter chicken came into existence. Moti Mahal became a famous attraction of Delhi and it did not take much time to come it in under the limelight and people from every walks of life started enjoying it. Recipe

Here’s the recipe of the flavoursome dish followed by us at Queens of India, Bali:

-Take a large bowl and mix together yoghurt, onion paste, green chillies, ginger-garlic paste,

-sugar, salt, green cardamoms, black cardamoms and mace powder.

-Add pieces of raw chicken in the bowl and mix well. Allow the chicken to marinate overnight.

-Once the chicken is well marinated, roast it in a tandoor or an oven till its 3/4th done.

-Now, heat little butter in a pan over moderate flame. Add bay leaves, cloves, cinnamon,

-red chillies and crushed coriander seeds.

-Now in the same pan, add a bit of onion, red chilli powder, coriander powder,

-fenugreek leaves to powder and tomatoes.

Sauté them for 5 minutes and once done, transfer the mixture in a blender to make a puree.

Heat the remaining butter in a pan. Add the pureed mixture and bring it to a boil. Add
marinated chicken pieces, salt, fresh cream and mix well.

To make sure that the consistency is not too thick, add some water to the mixture. Now add sliced green chillies, crushed fenugreek leaves and let it simmer for a few minutes. Bring it to a full boil.

Transfer the dish to a serving bowl and garnish it with coriander leaves and cream.
